Smelt with a crust of lime and parsley

Small minnows of the Aegean is what prompts the everyday meal and snack during the summer. A little lime and the flavor of parsley can give another dimension to the classic fried Smelt.
Ingredients
½ pound of smelts, anchovies or sardines
1 tablespoon of grated lime peel
1/3 cup of lime juice
¼ cup chopped parsley
2 tablespoons oil
some rocca leaves
flour
corn oil
salt and pepper

Preparation method:
Step 1
Clean the fish, remove the heads and the backbones.
Step 2
In a wide bowl, mix the oil, lime juice, salt, pepper and most of the parsley (leave a little for garnish).
Step 3
Add the fish, cover them well with the mixture and let it marinate in the refrigerator for half an hour.
Step 4
Mix the flour with the lime zest and parsley
Step 5
Meanwhile, heat the corn oil well. Remove the fish, drain it well, Then, swipe it through the flour and fry it
Step 6
Serve on a platter, with leaves of rocca, a little extra lime zest and lemon slices
